Chipotle Marinara Spaghetti Squash and “Cheese”

INGREDIENTS
Spaghetti Squash | 1 Cherry Tomatoes | 2 1⁄2 Cups Vegan Nut Cheese | 1⁄4 Cup Cilantro | 1⁄2 Cup Coconut Oil Spices| Chipotle, Pepper, Paprika
DIRECTIONS
- Preheat Oven to 400’F
- Cut Spaghetti Squash in half lengthwise. Remove the pit of seeds and discard seeds. Lather squash inside with coconut oil. Place in oven on oven safe try for 35-40min.
- While Spaghetti squash bakes prepare the chipotle marinara sauce. In large frying plan place 3 Tbsp. of coconut oil. Add in cherry tomatoes and leave on medium for 7-10min, stirring occasionally. After some time, the tomatoes will “pop” and form a sauce.
- Once sauce is formed add chipotle and other spices.
- Once, spaghetti squash is done baking and sauce is done fill the squash with the sauce. Top with your favorite vegan “cheese”.
